Ease Level: You can do it!

Gluten free friends coming for brunch sent me to the internet in search of a crustless quiche. The Crustless Summer Quiche was one of the top hits from AllRecipes: Recipe!
With some minor tweaks it turned out great and inspired me to share it along with the modifications I made to create it using ingredients I had at my disposal. 
As a mom who works 40-70 hours a week, I often am in search of recipes that are forgiving of substitutions and are really good. Why should flavor be sacrificed despite my limited time table?
This recipe includes kale, carrots, and tomato which definitely had me thinking it had the potential to be terrible. I kept thinking about my uncle’s kale joke:
Pro Tip: If you stir coconut oil into your kale it makes it easier to scrape into the trash.
I also have a partner who does not like tomatoes. However, I did have kale sitting around with no purpose so why not. Backup plan was scrambles eggs and a lot of champagne!
Thankfully, this recipe turned out to be very forgiving:
- 1/2 onion instead of a whole onion
- Used desired amount of chopped fresh garlic instead of 3 cloves of minced garlic
- Used the kale on hand, not a measured 5 cups and spinach would have worked
- The time to sauté is flexible; I eyeballed the kale instead of waiting 5 minutes
- Used one large shredded carrot instead of a measured half cup
- Omitted tomatoes from the sauté, but did arrange halved grape tomatoes on top
- Any kind of milk works be it cream, half and half, or skim.
- Cheese is cheese is cheese, it clearly does not need to be Sargento!
There are very few places you would have to stick to the recipe for this quiche. You could use more or less egg, cheese, milk and just about any veggie as long as you cook out the water first.
With a one year old on my leg, it took about 40 minutes from the start to getting it in the oven. With some hearty sides it was a good portion for 4 adults and a 1 year old if you don’t want leftovers. Not only did it work for my gluten free friends, but the tomatoes were easily removable for my partner.
I have also attempted this as a potluck meal and it bakes for the same amount of time in an 8×8 square recyclable tupperware. It also reheats beautifully as there is no crust that gets soggy.
