The Ugly No Bake Cookie

Ease Level: If you can turn on the stove and not burn yourself, you are ready!

Time: 15 minutes including prep and cooking, 1 hour to cool on counter

Ah, the often overlooked no bake cookie. It is 100 degrees outside and turning on the oven is not an option, but I really want a lot of cookies. No bake cookies to the rescue!

At the risk of the movie Inception copy write infringement, I’m going to highlight a blog within a blog because this recipe is both awesome and very tweak-able. Recipe!

Things about this that can be modified about this recipe:

  1. Do not waste your time cutting the butter into pieces. Don’t even bother thawing the butter. Just put the butter in the saucepan.
  2. You can add wheat germ and or flax seed if you are eating a lot of cookies and want to sneak in some health properties.
  3. The type of peanut butter can be as cheap or natural or not peanut originated as you desire.
  4. Don’t bother measuring out the cookie, just grab a spoon and land one scoop on some wax or parchment paper.

Things you cannot change about this recipe:

  1. The type of oat!
  2. The type of oat!
  3. Do not use old fashioned fancy oats!

These cookies are awesome and should really be more prevalent, but I think it is their physical appearance that leaves them shut inside when really they should share their radiant chocolate peanut butter goodness.
