Pulled Pork in a Pinch

Ease Level: So so so easy!

Time: 30 second prep, 8+ hours in slow cooker

This is the recipe to turn to when your fancy catered main course falls through less than 24 hours before the big event.

I’m not even sure if there is a real recipe for this and how I picked this up several years ago, but it works:

  1. 1 pork shoulder (estimate 1/2 lb per person and bone in is fine)
  2. Root Beer

For a normal sized crockpot, probably stick to about 6lbs to be safe. Or, do what I did and buy 8lbs, realize it doesn’t fit, cut off about 2lbs and start a second crockpot.

You do not have to cover the meat with the pop! I learned that the pork will figure it out even if you only add about 1/4 cup of soda.

To be safe, I let it cook overnight on low and then poke it with a fork after about 8 hours. If the meat doesn’t gently pull apart with little effort it isn’t done. For 8lbs, it took about 10 hours on low. Do not try to rush this recipe! It is at its best when ignored.

After it is cooked, shred it up with a fork and leave it on warm until after your event. Makes for great leftovers too!
