Easy as Cake

Time: 1 hour including prep and cooking.

It is Apple season! We went to a cute orchard in Indiana and left with a peck of Apples. I also got news, that I was accepted into a local amateur baking contest. I have entered in the cake category. Apples + needed cake practice = apple cake!

This was the first hit when I searched for apple cake: Apple Cake

It seemed too good to be true. Already a simple recipe there is very little at stake if this thing goes south. Due to some low baking supplies there are still some suggestions on cheats below, but for the most part this is the simplest recipe for cake I have ever made and it makes a ton. It tastes like coffee cake got confused with some apples. Perfect for every pot luck this fall.

Ingredients

  • 1 1/2 cups brown sugar – You can get away with one cup packed sugar.
  • 1/3 cup oil – They are serious, this is veggie or olive. 
  • 1 egg
  • 1 cup buttermilk (you can sub milk+vinegar, or plain yogurt+milk) – or whatever is in your fridge that says milk.
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 1/2 cups chopped apples (I used Wealthy heirloom) – Nobody measures fruit this way. Just chop up two Apples and don’t stress on the size of the chop. If you like big apple pieces in your cake, make them big. 
  • 1/2 cup sugar – This is the start of the topping, don’t mix this into your batter. 
  • 1 teaspoon cinnamon
  • 1 tablespoon butter

Steps

  1. Preheat oven to 325.
  2. Mix ingredients in order given (except the last 3 ingredients).
  3. Pour batter into a 9×13 greased pan. – If you measure like I did your batter will look more like bread batter than cake batter. It didn’t exactly pour out…more like I convinced it to transfer over and then squished it to fit the 9×13. 
  4. Combine last 3 ingredients to make a topping and sprinkle it evenly over the batter.
  5. Bake for 45 minutes. It’s delicious when served warm!
